What 200 Proof Alcohol Means?
 
Proof is a concentration measurement. In the United States, proof is exactly twice the percentage of alcohol by volume. A liquid that is 100% ethanol is therefore 200 proof, the upper limit possible for ethanol because it represents absolute purity with no water remaining.
 
Reaching 200 proof requires going beyond standard distillation. The limit for distillation in terms of ethanol content is 95% (or 190 proof) owing to the nature of the interaction between water and ethanol molecules. Denatured alcohol contains toxic chemicals, methanol being the most common, added intentionally to make it unfit for drinking. This prevents manufacturers from having to pay alcohol excise tax on non-consumable products. The additives do not evaporate when the alcohol does; they remain in any extract made with it. A 200-proof denatured ethanol is not food grade and is not safe for the extraction of any consumable product, regardless of its concentration or price.

The question is not which term is preferable but which combination of properties your application requires. For herbal extraction, tincture making, culinary extracts, or any preparation consumed by humans, the minimum is food grade ethyl alcohol. Proof level depends on the target compounds: 200 proof for purely fat-soluble targets, 190 proof when the extraction needs to reach both fat-soluble and water-soluble compounds.
 
Organic 200 proof alcohol and organic 190 proof food grade ethyl alcohol are both available from specialist suppliers and add the assurance that the source crop was grown without synthetic agricultural chemicals. This matters for extracts consumed regularly over extended periods. For laboratory use where purity is the priority but the application is non-consumable, food-grade requirements may matter less than proof level or specific purity specifications. Cost considerations follow from this: food grade ethyl alcohol carries certification costs that non-food-grade products do not.

Read product specifications rather than labels alone. A label that reads "200 proof alcohol" without specifying food grade does not confirm the product is appropriate for consumable extraction. Look for explicit food grade certification or a certificate of analysis from the supplier.
 
Understanding labels on ethyl alcohol means looking at what is absent, specifically denaturants and contaminants, not only what concentration is present. Shelf life for both 200 proof and food grade ethyl alcohol depends primarily on storage conditions. Sealed glass containers in cool, dark locations maintain both concentration and purity. 200 proof in particular must be sealed completely to prevent absorbing atmospheric moisture, which would reduce its concentration over time and alter the extraction results in subsequent uses.
